This coffee is organically-grown in the rich volcanic soil of Chiapas, the most southerly state in Mexico, on the Guatemalan border. Mexico is one of the largest producers of organic coffee in the world.

These beans are graded as Estrictamente Altura (Strictly High Grown or SHG) to verify that they are grown at an altitude of around 1,350 metres above sea level. At a higher altitude the beans mature slowly, increasing their density and enriching their flavour.
